Nice discovery Arm!

So, reading the speech of the Keeper of Nogannon, we can even think that all the seed races were biomass since the beggining, and only the Earthen were modified with stone in their constitution.

What is a 'subterranean being matrix' ?

It is one of the synthesis matrices the Creators use when seeding a world. Each synthesis matrix is used to achieve the Creators' goals. For Azeroth, a subterranean being matrix was modified to create a being with increased durability with an affinity for deep region shaping; the Earthen are the product of this modification.
Here, we have:
* there were synthesis matrices which the Titans use to seed a world;
* one of them was modified with stone - the Earthen;
* the other matrices (the other seed races) weren't modified - they were biomass since the beggining.

So, perhaps the 'Curse of Flesh' is only related to the Earthen.. the other races, i don't know

And the Gnomes. Can't forget them.

Overall, Blizzard keeps pretty damn consistent with their Titan Lore, and as it happen...Titan lore is some of my favorite lore. ^.^
