You are wrong. Early versions of the engine were limited to these quandrangular maps as building blocks of the world as a whole:

To fit all they wanted, designers had to alter the shapes of the continents drastically.
Compare with eve older maps from the manual:

Aye, hence why they had to ultimately make the continents rectangular. Though there was also some other problem which made it all crash, thus why they even had to remake Lordaeron.

Alterac Mountains, Silverpine Forest, and Hillsbrad Foothills say hi?

I don't see said quadrangular limitation anywhere. Some zones are squares? Yes, so what? The other half aren't.

The map can be fixed easily:

* Move Ironforge to the north, so it covers the empty space at Wetlands.
* This leaves more space at the eastern and central area.
* You can now move Gnomeregan to roughly the current position of Kharanos.
* Move Anvilmar valley to the east, next to Searing Gorge.

You can literally nuke the entire Gnomeregan and Anvilmar valleys, or in short, everything east of Kharanos, moving them north or south, and keep the original shape of the bay, so that Kul Tiras and Tol Barad can fit inside.

In short, pretty much rotate the entire zone except Anvilmar 60-90ΒΊ counterclockwise.

How long before Dareth and the Wildhammers start teaching the Bronzebeards druidism?

Can we call dwarven shamans, monks and druids geomancers?

You could, but it would feel redundant since the characteristics of geomancy are inherent to preexisting classes.
